Mac & Cheese
This steaming pot of comfort is the perfect winter warmer. Apart from being a delicious Mac & Cheese this recipe has the convenience of being made all in one pot. Who could resist that?

Ingredients
50g Butter
3 tbsp Flour
2 Cups of Milk
2 1/2 Cups of Water
250g of Pasta
2 Cups of Grated Cheddar Cheese
1/2 Cup of Grated Mozzarella Cheese
Salt & Pepper
1 tsp Garlic Powder
Method
Start by melting the butter in a cast iron casserole dish over a low heat. Stir in the flour and cook for 1 minute.
Add 1 cup of milk and mix.
Add remaining milk and stir until the slurry mixes in. Then add water and seasonings.
Add the pasta and stir well.
Give occasional stir as it cooks. When you see wisps of steam turn the heat down to low.
Stir regularly until the pasta is just cooked.
Take off the stove and stir in the cheese quickly.
Serve Immediately
This is a Mac & Cheese recipe that has been a firm favourite in my family for years.
Feel free to doctor the cheese quantities and varieties, it’s all about preference and possibly what is in the fridge.
Also use whatever pasta you have to hand. I know traditionally it should be elbow pasta but I always have an abundance of fusilli and usually just use that.
I’ve always used my cast iron pot for this recipe, feel free to experiment with the pot you have, no need to buy one if you don’t already have it!
